Heat-lovers, here's another Mexican favorite used in a variety of
dishes, from salsas to soups, with a distinctive, pungent flavor. Large
2-3' plants produce fruits about 5" long that start out bright yellow
and turn red as they mature. 70 days. A Hungarian heirloom that is excellent for short season areas,
very popular for canning and pickling. Medium to very hot fruit is light
yellow in color; sets fruit over a long season.
This pepper is usually harvested before maturity when still yellow. It measures between 4"-6" inches in length (10-15cm) which tapers to a rounded point. Upon maturity, the pepper becomes orange then red in color. Although similar in appearance to banana peppers when immature, it is a different cultivar.
Due to the ease of cultivation and the productivity of the plant, many home gardeners pickle these whole or sliced in rings.

Only home gardeners who enjoy long growing seasons in the Deep South
should attempt to sow pepper seeds directly in the vegetable garden.
Most of us must start our own pepper plants indoors about 8-10 weeks
before transplanting after the last frost. Hot peppers tend to be hotter when they have less water and
fertilizer. If they receive plenty of water and fertilizer they may be
more mild than expected.
