The Cubanelle, also known as "Cuban pepper" and "Italian frying pepper", is a variety of sweet pepper of the species Capsicum annuum. When unripe, it is light yellowish-green in color, but will turn bright red if allowed to ripen. Great for roasting.

Cubanelle is a thin-walled, long, tapered pepper with more flavor and a lower water content than other bell peppers. It's best picked when yellow-green for use in roasting or frying but can also be left to mature when it will turn orange-red.
Only home gardeners who enjoy long growing seasons in the Deep South should attempt to sow pepper seeds directly in the vegetable garden. Most of us must start our own pepper plants indoors about 8-10 weeks before transplanting after the last frost.
